Vegan Cooking

So, our friends came over this weekend.  They are vegan so I have been trying to cook different things that they can eat.  This weekend was no different.

I adapted a recipe that I found for Stuffed Pepper Poppers.  It was supposed to be served cold, but they were also supposed to be mini peppers and all I could find were regular sized peppers.  The ones I made included bell peppers, cooked brown rice, cooked black beans, frozen corn and one diced bell pepper.  I cut off the tops of the peppers and cleaned out the insides, cooked the rice and beans, then added all the other ingredients.  I mixed them together, stuffed each of the peppers, put the tops back on and cooked them in the oven at 350 degrees for 30 minutes.  I served with a side of salad.

It was also their child’s 1st birthday the week prior, so, as well as gifts…

Vegan Chocolate Cake with Vegan “Buttercream” Frosting

I can’t remember all of the ingredients for the cake itself, but you can find the recipe here and, from what I was told, the cake was quite good, but I should have at least doubled up on the ingredients to make a bigger cake.  The frosting consisted of powdered sugar, coconut oil, vanilla extract and salt.  It was pretty easy to make, but, in the end, tasted a lot like coconut and had a very difficult time adhering to the cake.  Personally, I liked the flavor, but it could be pretty overwhelming.  You can find the recipe here.
